Culinary innovation drives avocado consumption in the US
With a 260% growth in per capita consumption over the past two decades, the avocado industry is looking for new ways to inspire the American consumer through creative recipes and nutritional education.
The United States has established itself as an avocado-loving nation, with consumption growing more than 260% in the last 20 years, according to data from the Hass Avocado Board (HAB). The increasing awareness of avocados' nutritional benefits, combined with their presence in popular dishes like avocado toast, has driven up demand and perceived value. To further promote consumption, HAB has partnered with Food & Culinary Professionals (FCP) to develop innovative recipes that showcase new flavors and uses beyond the traditional ones.
This collaboration has resulted in creations such as Javacado iced mocha, gnocchi with a creamy avocado and cilantro sauce, corn soup with avocado, and dressings made with blended avocado. The initiative aims not only to delight the palate but also to support health goals by integrating this fruit, rich in healthy fats and fiber, into the daily diets of households and food service establishments. “We want to spark consumer curiosity and make eating avocado more exciting than ever,” said Amanda Izquierdo, spokesperson for HAB.
In addition to recipe innovation, HAB promotes nutritional education to bridge the gap between knowledge and healthy habits. Although 93% of Americans recognize the importance of good nutrition, only half consistently maintain a balanced diet. In this context, fresh avocados are presented as an accessible option to improve fruit and vegetable intake. Their impact is also reflected in sales: during the last quarter of 2024, more than 167 million units were sold, with a significant boost from the bagged format, which increased sales volume by 18.1%.
